Quick Pasta with Tuna and Tomatoes

320 g linguine
200 g tuna fillet
150 g canned tomatoes (can use fresh tomatoes)
50 g olives
2 tbsp capers
1 clove garlic
1 tsp olive oil
1 tsp oregano
pinch of salt
dash of pepper
Directions
- Start by bringing a pot of water to boil for the pasta.
- Rinse the capers under some water. Drain the tuna from the oil.
- Pour the olive oil in a pan and fry the garlic in it. Add the canned tomatoes. Let them cook and mix from time to time.
- Add the olives, capers and the drained tuna to the tomatoes*. Add in the oregano, salt and pepper.
- When the water is boiling, add a large pinch of coarse salt, then add the pasta. Once the pasta is cooked al dente, drain the pasta and mix it in to the sauce. Plate and serve.
Notes
- For a burst of flavour add a knob of butter or a drizzle of olive oil in when mixing in the pasta with the sauce. Make sure to incorporate it homogeneously in with the pasta.
- *If you prefer you can choose to chop the olives and capers.
