- Rub for the Ribs
2 tbsp sweet paprika
1 tbsp ground coriander
1 tsp cayenne pepper
1 tsp cumin
1 tsp salt
1/2 tsp pepper
- Ribs
2 – 2.5kg pork ribs (approx. 2 racks)
200ml apple cider
1 tbsp olive oil
100g BBQ sauce
Directions
- Mix all the ingredients of the rub together and rub onto the ribs, mainly on the meaty side. Set the ribs aside to marinate for at least 20 minutes, or latest overnight. The longer the meat is marinating for, the more flavour it will have.
- Preheat the oven to 160°C. Place the ribs meaty side up on a big enough tray to fit them comfortably and not on top of each other. Pour the apple cider underneath the ribs and cover the tray with foil. Place in the oven to bake for 1 hour 30 minutes or until the meat is pretty tender.
- Remove from the oven, turn the oven up to 180°C. Remove the foil from the tray and drizzle the ribs with olive oil. Place the uncovered ribs in the oven for around 15 minutes. In the mean time, line a new tray with foil and then baking paper.
- Remove the ribs from the over and transfer them to the lined tray. Pour the juices from the tray over the ribs. Flip ribs so the side of the bones is face up. Using a tablespoon put the barbecue sauce on the ribs, use a pastry brush to rub the barbecue in the ribs, then return them to the oven for 10-15 minutes.
- Remove the ribs from the oven, turn them over so the meatier side is face up. Using a tablespoon put the barbecue sauce on the ribs, use a pastry brush to rub the barbecue in the ribs, then return them to the oven for another 10-15 minutes. Repeat the turning of the ribs 2-3 more times per side. This should result in a thick glaze on the ribs.
- Once this is achieved, remove the ribs from the oven and let them sit for a bit. Cut the ribs either individually or as half a racks. Serve them with any remaining juices that have now merged with the barbecue sauce.
Notes
- The grams of the spices in the recipe are just an estimate feel free to add more or less according to your liking. Other spices can also be added to your liking, but I find these to be a good combination.
- Alcoholic apple cider is the best to deepen the flavour of the ribs. Other ciders and pale coloured beers also work. If you want to make this an alcohol free meal you can substitute the apple cider with apple juice. As a last option use broth or water.
