Ingredients

  • 5 green tea bags

  • 2 lemons (1 for the peel, 1 sliced) (can use limes instead)

  • 5 tbsp honey

  • 20-24 mint leaves

  • 500 ml hot water

  • 1500 ml cold water

  • ice (optional)

Directions

  • Peel the zest of one lemon being careful to not include the white rind, as this is the bitter bit. Add the lemon zest to a pitcher with the green tea bags, honey and around 10 mint leaves.
  • Boil around 500ml water and pour it over the pitcher with all of the ingredients, let it all steep for approximately 5 minutes. Remove the tea bags, the lemon peel and the mint leaves. Allow the tea to cool completely.
  • In a pitcher place some ice, cold water, the sliced lemon* and 10-14 mint leaves. Once the tea has cooled, pour it in the pitcher and serve.

Notes

  • For those who prefer:
    – a stronger tea taste – you can either remove the honey or you can add more tea bags to this recipe. You can also steep the tea bags twice to get a somewhat stronger taste.
    – a sweeter taste – you can add more honey to the above.
  • * To avoid wasting a perfectly good lemon, you can slice this up in the pitcher together with the other lemon or instead of it.
