- For the roasted carrots:
3 carrots, washed and peeled
3 garlic cloves
1 tbsp extra virgin olive oil
dash of pepper
pinch of salt
- For the dip
25g roasted pistachios
1 tbsp tahini
1/2 tbsp lemon juice
1/2 tsp cinnamon
1/2 tsp turmeric
1/2 tsp cumin
1/4 tsp sumac (optional)
pinch of salt
dash of pepper
100 ml water (optional)
Directions
- Preheat the oven to 205ºC. Chop the carrots into large pieces of roughly 3-4cm.
- Add the carrots and whole garlic cloves to a pan. Drizzle with the olive oil and season with the salt and pepper. Give them a good mix with your hands to coat everything evenly. Roast them in oven for about 30 mins, until the carrots are tender and the dges are turning golden brown.
- Add the roasted carrots to a blender, adding the pistachios, tahini, lemon juice, cinnamon, turmeric, cumin, sumac, salt and pepper. Blend together until smooth*. Taste and adjust seasoning as desired.
- Serve the carrot dip in a small bowl. Drizzle with olive oil and garnish with some fresh parsley or chopped pistachios. Serve with some crackers or some fresh veggies. Enjoy!
